Hapa Hour: Edamame Hummus & Smoked Trout Appetizers

Hapa Hour: Edamame Hummus & Smoked Trout Appetizers

Today's mixer is a nice Summery appetizer; Edamame Hummus & Smoked Trout Crackers paired with a cucumber mint margarita.

Ingredients:

1 pkg Rice crackers/ wholewheat crackers
1 English Cucumber (as replacement for crackers)
2 cans Smoked trout
1c Edamame hummus (recipe follows)
1/4 c Basil cream (recipe follows)

Edamame hummus
1/2c shelled edamame cooked
1/2c tahini
1/4 to 1/2 tsp toasted sesame oil
Juice from 1/2 lemon
Salt to taste

Combine all ingredients in a food processor and pulse to desired consistency.

Basil cream
1/4c of heavy cream
1/4c pack basil leaves
Salt and pepper to taste

Combine all ingredients in blender and blend for 1 to 2 seconds.

Assembling the crackers is easy. Layer the hummus, then a morsel of smoked trout and top with the basil cream. Yield 24 pieces or so.

Minted Moscow Mule
4 oz vodka
5 -7 mint leaves
1oz simple syrup or 1-2 tbsp sugar
4 slices of cucumber + 2 for garnish
1 lime
1 can ginger beer

Muddle mint, cucumbers, and sugar in a large cocktail shaker. Add lime juice, vodka, and ice. Shake, pour into two glasses and top each one with ginger beer. Garnish rim with a slice of cucumber. Until next time, kampai!

Your gonna love this

It's a lot closer to a Moscow Mule...mint being the difference.  So, let's call it a Minted Moscow Mule.  Can I have one now?

I love to make cucumber soup

I love to make cucumber soup in sumer,  chilly... but i never thought to add vodka in it, how clever!!!

Alcohol makes everything better!

I kid I kid...kinda.  No really, if you add vodka to your cucumber soup, just be careful and taste while you're adding cuz you can go overboard.  But don't despair if you do, just throw in some ice cubes and use highball glasses vs. bowls and it's a nice cocktail!

No No, its right, i put alcohol a bit every where. Sometime its terrible, has for the fruit salad, what should i put in it, red wine with a slice of lemon or rum?

Rum!

I think rum would be just right.  Then let 'em soak it up so the flavors meld together.  A mint garnish would look really nice, too.

it's not a margarita actually, unless you swap vodka for tequila

which would be equally delicious.  the original plan was for a margarita but as you know, plans have a knack for changing.  Anyway, still delicious.  And what's that saying...a rose by any other name...
