Hapa Hour: Curried Apple Soup & Hot Toddy

Happy last days of summer. Sorry for the long absence but we are back with a few end of summer pairings for your final rooftop gatherings. Also check out all our past episodes of Hapa Hour!

Today we are making a vegan Curried Apple Soup, paired with a Hot Toddy, so lets begin!

Curried Apple Soup Recipe
Ingredients:

  • Vegetable or Olive Oil
  • 2-3 Granny Smith Apples (cubed)
  • 2 cloves Garlic and 1 small Onion (course chopped)
  • 7 ounces Coconut Milk
  • 2 teaspoons Curry Powder

Preparation:
1. Sauté the garlic and onions
2. Add salt and curry powder
3. Add apples to one quart of water
4. Bring to boil to soften apples
5. Use a hand mixer to purée, and add coconut milk
6. Serve hot and garnish with yogurt

Serves four.

Hot Toddy:
Ingredients:

  • English Breakfast tea
  • 1 gallon water
  • orange and lemon slices
  • 3 sticks cinnamon
  • One 2 to 3-inch piece ginger, sliced
  • 1/4 cup (packed) brown sugar
  • add whiskey

Preparation:
Pour the water into a large pot. Add the cinnamon and ginger and bring to a boil. Reduce the heat and simmer for about 30 minutes. Remove from the heat and carefully remove the cinnamon and ginger. Add the brown sugar and stir until completely dissolved. Add whiskey or bourbon to taste.
