Hapa Hour: Edamame Hummus & Smoked Trout Appetizers
Today's mixer is a nice Summery appetizer; Edamame Hummus & Smoked Trout Crackers paired with a cucumber mint margarita.
Ingredients:
1 pkg Rice crackers/ wholewheat crackers
1 English Cucumber (as replacement for crackers)
2 cans Smoked trout
1c Edamame hummus (recipe follows)
1/4 c Basil cream (recipe follows)
Edamame hummus
1/2c shelled edamame cooked
1/2c tahini
1/4 to 1/2 tsp toasted sesame oil
Juice from 1/2 lemon
Salt to taste
Combine all ingredients in a food processor and pulse to desired consistency.
Basil cream
1/4c of heavy cream
1/4c pack basil leaves
Salt and pepper to taste
Combine all ingredients in blender and blend for 1 to 2 seconds.
Assembling the crackers is easy. Layer the hummus, then a morsel of smoked trout and top with the basil cream. Yield 24 pieces or so.
Minted Moscow Mule
4 oz vodka
5 -7 mint leaves
1oz simple syrup or 1-2 tbsp sugar
4 slices of cucumber + 2 for garnish
1 lime
1 can ginger beer
Muddle mint, cucumbers, and sugar in a large cocktail shaker. Add lime juice, vodka, and ice. Shake, pour into two glasses and top each one with ginger beer. Garnish rim with a slice of cucumber. Until next time, kampai!
