Hapa Hour: Five Spice Corn Fritters with Ginger Beer Shandy

Welcome to our new video series, Hapa Hour, a cocktail and food pairing cooking show for the urban foodie.

Hapa is a word that originated in Hawaii, as a term which indicated anyone of mixed Asian or Pacific Islander with Caucasian heritage. The word was imported to the mainland and is now used by anyone of mixed race.

The idea of mixing and pairing food and drink is at the heart of fine cuisine. Today we bring you that Hapa flavor in our new series of creative, unique (and easy to make) recipes and drink mixes for the foodie on the go. Enjoy!

For our first recipe:
Five Spice Corn Fritters with Thai Chili Dipping Sauce,

Paired with Ginger Beer Shandy
Dry ingredient
½ cup whole wheat flour
¼  cup all purpose flour
2 tblsp corn meal
1 tblsp baking powder (1 part baking soda to 2 parts cream of tartar)
¼ tsp five spice powder
 
Wet ingredients
½ cup frozen or fresh corn kernels
2 tblsp finely chopped scallion or other fresh herb
Add Sapporo beer til consistency of thick pancake batter or waffle batter
 
Extras
2 tblsp chopped cilantro
Thai chili dipping sauce (found in most Asian markets)
 
Method
Mix dry then add wet and mix until incorporated.  Use a couple tablespoons of canola or peanut oil in a non-stick or cast iron pan.  Heat to almost smoking.  Spoon batter into pan careful not to overcrowd.  Reduce heat to medium and cook until brown (3 to 4 minutes).  Flip and repeat.  Drain on paper towels.  Serve hot or room temperature.  Garnish with the chopped cilantro or other fresh herb and serve with Thai chili dipping sauce.
Yields 6 to 8 fritters
 
Ginger Beer Shandy

Stir together one part ginger beer to one part Japanese beer (Sapporo) or other light pilsner.  Serve alone or over ice.  Garnish with citrus wedge.  ENJOY!!
